Jamaican Vegetables and Sweet Potatoes
I made two more dishes from Bryant Terry's Vegan Soul Kitchen. I made a couple of changes but not much. I made the Jamaican Veggie Patties without the Patties. So I just made the filling and served it over quinoa. To add some more protein, I added black-eyed peas to the mix. It was a little too spicy for me - I added too much red pepper flakes and cayenne powder. Have to be careful next time (and there will be a next time!)
On the side, I made Roasted Sweet Potato Purree with Coconut Milk. It was YUMMY. V would have preferred it if it was not purreed. He just wanted the roasted sweet potatoes without the coconut milk. But, I still loved it :)

I was looking at those veggies patties and thinking I should try them. I like your deconstructed approach. What does the filling taste like? Anything familiar? I am not sure M will eat it but he is going away again on Saturday so maybe I will make some for me! I love sweet potatoes. Think by any chance this is low fat? hahahaha
ReplyDeleteI thought it was low -fat - I did not have coconut oil, so I used olive oil and that's all that it has that has any fat. The rest is veggies and low-fat coconut milk. And not too much of that either. So I'd say it is low-fat, may not be fat free. The veggie patties did not remind me of anything else - they were unique. The sweet potatoes were the best!!
