Tofredo


As I mentioned, I made a Shepherd's Pie last night that was not all that post-worthy so I have decided to write about one of our old favorites-Rich and Creamy Low-Fat Vegan Alfredo which we affectionately refer to as "Tofredo." I know I have told you about this before but it is definitely on our regular menu so I thought it deserved some recognition. I always add black pepper and 1-2 cloves of minced garlic. I generally use Galaxy Foods Vegan Grated Topping-Parmesan Flavor or just Nutritional Yeast for the Soy Parmesan. I am not crazy about this grated topping and if you have a better idea, let me know. I have heard about Parma which is made out of walnuts but have not tried it yet. Looking at its ingredients, I could probably make my own in the food processor since I have all the ingredients.

I was thinking that I liked having a loose "theme" (like Burgers) to help steer me toward new recipes. Any ideas for a new one? I have a bunch of burgers in the freezer now and lots of ideas too! I want to eat less pasta but that is what my family likes so they will always be part of our menus. Of course, sweets are ALWAYS on my list also since I want to fatten M up!

  1. A lot of the conference was about RTI - not something I have to worry about (another reason why I am glad that I dont work in the schools and hopefully won't in the future), but good for me to know about. But, that was the talks I chose to attend.
    I think the eggplant dish is something you can eat. You can reduce the amount of chilli powder, black pepper to your taste. It was yummy.
    The photo was of the echilada. M is going to China again??

  3. I know it was a re-post or sorts but that's all I had. Yours was embellished with cream cheese and other ingredients. I kept it simple this time. I still want to make one more burger, I think, with soaked seeds/nuts. I had a recipe and got all of the ingredients but now I can't find it! School therapy sucks if you ask me. RTI seems to mean more work initially to help reduce number of IEPs needed.

  4. Do you have a recipe for the eggplant dish or is it something you made up? Any Ideas for Kale or greens other than spinach? I want to incorporate more this week.

    Kale - I got a lot of it during CSA last summer and cooked it a lot with eggs and just sauteed or with pasta (in place of spinach). Not sure where those recipes are - I am sure I will need the recipes again this summer. I'll look and email you some links if I find any recipes.

  8. oops, found it. Somehow I missed the link (I guess). I don't think i have ALL those spices but maybe most of them. What are curry leaves? Should I just use basil?
